By washing, peeling, and sun-drying mature rhizomes, its moisture is removed, concentrating its active compounds.
This creates a more potent, deeply warming, and spicy spice than fresh ginger.
It has a sharp, earthy, and pungent flavor with a subtly sweet undertone, which differs significantly from the bright, zesty taste of fresh ginger.
Widely used across India, it is referred to as sonth (Hindi), sunti (Bengali), sukku (Tamil/Malayalam), and soonth (Gujarati)
